I work at a farm as a horse trainer and pay the property owner 10% of all riding fees and a portion of stabling fees. What type of expenses are these. Are they office fees or rent?

Since you are collecting the money and paying this person, you'd categorize this as contractor payments. You'd also likely need to issue this individual a 1099 in January.
